Pétillant Naturel, or 'pet-nat' if you've been to a trendy wine bar, is the old school way of making a sparkling wine. One fermentation, unlike the two you have for a traditional method (e.g. Champagne), with a more gentle fizz and slight haziness, and generally fruitier, making it more approachable than a Champagne.
Alban Foucher took over the reigns at Domaine La Seigneurie from his father in 2005, with the estate being in the family for over 50 years. Working organically since 2020, they are one of the last growers actually in the city of Saumur itself.
